I've come up with a compact configuration based on a screw-terminal expansion board that breaks out all the pins nicely:

Current assembly time for the basic unit is under one hour, and the terminal adapter board has M3 mounting holes. Wouldn't take much to adapt this layout for motor control, or other things more suited to an ROV

Our latest student logger uses only a ProMini & RTC module, and makes it easy to swap sensor modules via a couple of mini breadboards.

They run independent of your main power supply, and falcon tubes are good to about 10 meters depth.
They also run OK in a bag of mineral oil if you just wanted to tack one on to the outside of an ROV.
