That should work just fine by the looks of it. There is also OSD systems and that will be the route I will probably wind up doing.

I am seriously considering the Dragonlabs OSD+

I wish I could find a system that was designed specifically for ROV's in mind but haven't had any luck sourcing one yet.

The only problem i have with OSD systems is the positioning of the data on the screen, because if it's in the wrong place it could obstruct your view.

I bought one of those thinking the same thing. It was way too big to fit in the ROV. I also discovered that the Deans Style connectors would occasionaly lose connections and caused power loss. I bought EC5 connectors and they are way better.

Do you think the xt60 connectors would be better the the deans?

I can't say for sure. I know a lot of people like the deans connectors but I experienced issues with them right way and I wasn't taking a chance. I am guessing the XT60 plugs are also superior to deans style.

On i2c you can have as many slaves as you want connected to one master (Arduino in your case). That is because every i2c device has it unique serial number and while you are programming master there is a sequence when every device should present itself (one at the time) and master save it (in your case on EEPROM). Then every time you want data you send serial number on i2c bus and only one device will answer. It is very similar to 1wire (for i2c some say that is 2wire protocol).
