I was wondering, will the magnetism be altered or reduced if an outrider motor is disassembled?

Nope! If you'll be fine if you disassemble your outrunner motors. Just take out the setscrews around the shaft, and pull the two halves apart. People do this all the time to replace the shaft, or change which end of the motor the shafts protrudes through.
