I would, as long as you have about 10-15% compression, and your cap fits inside the cylinder with as little gap as possible, it should be fine
Don't shovel the o-ring grease in with a spoon, lol. it's a rubber lubricant not a sealant.
Too much grease can actually cause a leak as it's pushed out/in by air/water pressure.
Just enough to make the o-ring shiny is enough.
I'd polish the grooves and make sure they're an equal depth all round to give you the 10-15% compression as bindo says.
At work we polish out any score you can feel with a fingernail.
I wouldn't worry too much about roundness or chamfer of the groove edges as long as the ring is a good fit in the groove. making the groove wider to get rid of the chamfer will give the ring more room to compress sideways, not what you want.
If you can get an o-ring groove machined on the face seal, that would be better as water pressure is then pushing the end cap onto the o-ring and tightening the seal as you go down.
