Raspberry Pi as DVR

So i am working on my ground station... and got to thinking... could a Raspberry Pi be set up to act as a DVR to record the video signal coming up from my ROV?
There are package DVR kits out there... but i have no need to have a small LCD screen on it... and i am trying to work to a budget...
Anyone out there have any input on this?
The video feed will be a single RCA jack... no HD signal or anything like that...
Thoughts?
