What kind of boards are used to connect all the motors and cameras? or do you just use a cable?

This really depends on your level of skill / patience.
If you are not inclined to write a bunch of code to get your project to work, a hard wired switch set up may be best.
Such as this one!
If you like coding, then you may want to consider an Arduino or Raspberry Pi.
A third option, which is one I have no experience with personally, is to use exsisting systems that are common in the RC world, such as the systems used to run RC Planes. There are lots of threads dedicated to this topic here in the forums.
Personally, I am using the Arduino platform.
