Test setup for outrunner motor

I just bought an outrunner motor from HobbyKing with the following specs:
Kv(rpm/v) 700

I also bought an ESC from HK claiming input of 5-13 volts like this:

I have a switched 12DCV power supply capable of claimed 30 amp max power.

So my question is this, can I safely test this motor with this ESC and power supply under load or must I use batteries? I could buy a second DC power supply and wire the two in parallel if more amp capacity is needed. What do you think?

In all honesty, you probably could, though I'd be wary. My motors are rated to that same 13 amps, but I've measured it up to at least 20. So my advice would be to wait until you know the max draw of your system in order to protect your power supply.

Note* I don't know a lot about power supplies, so I could be wrong.
