I am using the same sensor with 500PSI rating. I think if it is stainless it should be ok in seawater. I plan to rinse it out after each run.

I would recommend not using a gasket, I had major issues with a gasket leaking over using O-rings which are much better at sealing under pressure. Fill the connector with non-conductive grease and that should keep the water out as long as the grease can't move somewhere else.
